Breakfast
This week I made a few egg and sausage breakfast burritos.
I used 6 whole eggs and then a few tablespoons of liquid egg whites that I had left in the fridge. For the sausage, I found these bad boys which I only used part of. A little goes a long way with them.
I used a smaller tortilla shell to help with the calorie count, then I added some cheese with the sausage and egg, wrapped them up in foil and popped them in the freezer.
I thew one in the microwave this morning for about 2 minutes or so and it was pretty good!
Lunch
I messed around with the breakfast lasagna recipe from last week and turned into a lunch recipe! Since Justin likes spicier food, I added some Chorizo to give his a little more flavor. I kept mine a little simpler, which actually didn’t work out. Mine is not great this week. His however, he absolutely loved. Loved.
I will be figuring out more precise measurements and then actually give you the recipe. This time I was just kind of throwing things together.
Dinner
My dinners this week are yum yum!! I decided to do a personal pizza for me on a couple nights.
I found a pizza crust to try, which turned out to be freaking delicious! I might buy a few more packs of these next time just to keep on hand.
Because I have something called GERD (Gastroesophageal Reflux Disease) I have been trying to avoid most tomato based food, which can make things worse.
So BBQ sauce is the way to go! I made BBQ chicken in our Ninja Foodi and use a BBQ sauce as the base to my pizza instead of traditional pizza sauce. Throw on some of the cooked chicken, and diced fresh mozzarella (which is absolutely the way to go! Fresh all the way!)…num num. Delicious.
I did buy some spinach to throw on there, but I haven’t tried that yet. I just went nice and simple last night and it was fantastic.
I was so excited I forgot to take a picture before I started eating!
On the nights I don’t have pizza, I just have some hamburger that I will bake into patties, potatoes and some peas. Nothing big.
Results
Well, I probably won’t make the burritos again for a while.
I will most likely make Justin the lasagna again next week, so I will try to actually create a recipe for that in case anyone wants to give it a shot!
I have no idea what I will do for my lunch next week yet, I need to do some browsing around.
And the pizza was phenomenal. I will probably pick up some ingredients to do it at least once or twice next week.

Haha! I used to think that way, and sometimes I still do. I just remember how good it feels to have food ready instead of stressing about what I’ll eat. Then I like it.
